1 ½ ounces Wisher Beet Vodka 1 ounce Blueberry Lemon syrup ½ ounce lemon juice 1 egg white* Lemon peel and extra blueberries for garnish
*Substitute 2 tablespoons aquafaba (liquid from a can of chickpeas) for a vegan variation
Blueberry Lemon Syrup 1 cup sugar 1 cup water 1 cup blueberries zest of 1 lemon
To make the blueberry syrup, combine water, sugar, blueberries, and the zest of 1 lemon in a pot. Bring the mixture to a simmer and cook for 5 minutes. Remove the pot from the heat and let the syrup steep for 15 minutes. Once done, chill the syrup in the fridge.
In a shaker, combine Wisher, blueberry lemon syrup, lemon juice and egg white. Dry shake (no ice) the ingredients for 15 seconds. Add ice to the shaker and shake vigorously for another 15 seconds. Strain the cocktail into a coupe or Nick & Nora glass. Garnish the cocktail with a lemon peel and a few blueberries.
